I managed to make one of my first
new to me Lenten Meals yesterday.

I can't fast fully due to the mono
but Mr. Husband is...
Often our fasting meals have been
of the raw vegan variety
other than a microwaved baked potato.
Friends who have known Mr. Husband for years
will know that this is typical Mr. Husband fasting fare.... :)
I like variety a little more...
I was so happy that one of my new friends
emailed me this recipe:

It is as follows:
Mix all dressing ingredients in a jar and shake. The dressing can be used on rice, salads, meat, fresh veg--anything.
And by God's mercy I had the
strength to make it!
I used white basmati rice, baby bok choi and we did not have
the nutritional yeast...
I used a veg oil for the dressing.
I loved this recipe as it had very little measurements
and I love being creative in the kitchen!
Mr. Husband helped me make the dressing as he
was home by then
and we both really enjoyed the meal. :)
Mr. Husband commented that
lentils and rice together make a complete protein
and that these dishes that have been around for
a long time are still around for a reason:
they work!

Lentils and Rice with Ginger Bok Choi
Lentils and Rice
.5 cup Lentils
.5 cup brown rice
2 cups water or vegetable broth
1 cube veggie bouillon (optional)
salt
Bring 2 cups water to a boil and add bouillon. After rinsing (or if you choose soaking lentils and rice overnight/ 8 hours with a splash of apple cider vinegar to help in digestion) lentils and rice add to water, bring to boil and reduce heat. Cook on low for 40 mins or according to rice cooking instructions.

Bok Choi
1 bunch bok choi chopped in 1 inch pieces
1 garlic clove
1 tsp (or to taste) fresh grated ginger
coconut oil
While rice is cooking heat oil over medium heat, saute minced garlic for 3-5 minutes but do not let it turn brown. Grate ginger and add ginger. Toss in chopped and washed bok choi and sautee for 5-10 minutes depending on how crisp you like it.

I am still enjoying our dishes, the platter I served the
meal on and the water pitcher.
When I make the fried potatoes and mushrooms
on Saturdays I put them on the same platter.
It works really well!
Today I have been recovering from a busy day yesterday
and Mr. Husband is home.
I really want to be baking again soon...
God willing I will be able to go to presanctified liturgy
tonight at our more local church
and that is a deep consolation.

It's beautiful weather out.
I am itching to regain my strength and be out doing things.
Meanwhile,
I am almost done with the Saint Luke book
and have done a few more rows on the baby blanket.

I am having a hard time not missing Ottawa.
Like a lot.
Yet...or...
At the same time,
I am so thankful for my life with Mr. Husband
and our churches.
And the birds I hear happily chirping outside,
and the sunshine...
I cannot go back in time and my peace comes
from being right where I am,
with God and with Mr. Husband.
I finally have someone to bake cake for and eat it
with on a daily basis!

Ooooh, that lentils and rice with bok choi look scrumptious!!! We made homemade lemonade yesterday. ♥
What a nice crock...a wedding present, I'm sure!
I'm definitely going to try the lentils and rice recipe! Sounds good! Homemade lemonade is the best!
