Cookies ~ white chocolate with macadamia nuts

Earlier this week I baked cookies...


Using Joy of Cooking...


I had not used white chocolate before...


Mr. Husband wished for
white chocolate macadamia nut cookies.


I decreased the sugar slightly... 


But next time I will cut out the white sugar all together...
and perhaps up the salt...


I am wondering if white chocolate chips
would of been better.


These cookies baked up well,
though spreading themselves quite thin.


Mr. Husband commented that they are very much,
at present, like a sugar cookie.
More of the macadamia nuts are needed,
and more chocolate! 
I will be searching for new recipes...

The cookie is still lovely, a sweet sugar cookie,
but I am going to seek to make the next batch more
hearty and chewy.

I have DV our postponed Christmas dinner this Monday...
We've decided just to make a normal cheesecake...
we have raspberry syrup 
and another fruit topping to go with...

with GF flour and no marshmallows..

I am dreaming of more baking... :)

Yum yum! these look so tasty, the right colour for a snowy winter and full of ingredients from sunnier climes :) I wonder if a proportion of whole wheat flour would help make them heartier, and darker brown sugar (demerara/turbinado) would add colour, flavour and chewiness. Some ground almonds instead of flour would make the cookie part richer and nuttier. I bet white chocolate chips, and maybe chopping the nuts, would spread those flavours throughout more. Thank you for sharing - I might just have to try these out tomorrow for church on Sunday! the flavours would be perfect with black coffee. Will post results if I do. 3 weeks until Meatfare...

They sound delish...wouldn't they be good with dried cherries too? I still have 3 of the 6 containers of dried cherries left that you gave us the end of December. ♥ Thank you again!
