Soup

It is a sunny day here again in Ottawa.

Today I thought I would ask for your recipe suggestions for
Potato Soup...
I am looking for yummy, simple and economical.
Any suggestions?
*
I just found out that there is a career fair I could go to;
not so much for librarian jobs
but maybe other jobs.
I solicit any encouragement or thoughts on this
and also if you have ever gone to one,
how did it go for you?

Hi Elizabeth, I can't offer much on the job hunt but potato soup: I never measure so these are just basic ingredients: Potatoes, onion, celery, if you like, some diced carrots. I slice the potatoes and carrots and boil them about half done then pour off most of the water and add milk, onion, celery, a couple cloves of minced garlic and a couple tablespoons of butter and salt to taste. Let it simmer until the celery gets soft. I've also experimented with adding a little rosemary, thyme or oregano and it works. If you have a slice of ham diced up it adds a nice flavor too.

After everything is cooked together I kind of mash it up a little so you don't have "mashed potatoes" but still have something to chew on. I'm not a big fan of "blended" soups personally.

Right... Yeah... I like blended soups for some things, but am not so sure I would for potato soup... thanks for the tips; now I just have to get my act together and cook! hopefully tomorrow night...

Thanks Sarah! Yeah, I saw yours... really like it, but to be honest I dont' want to spend the extra $ on the cheese; have to be careful with my grocery $ right now... but I did take note and thank you!!!

Good to know you went to one! Yeah, it can be a lot at once! Did you bring many resumes?

Hi Elizabeth,
Mm, potato soup - I usually cook all the vegetables in the bottom of the pot before adding water/stock. I find this helps to bring out the flavours, especially the earthy sweetness of root vegetables. And if there are leftover roast vegetables, even better. It does usually result in brown flecks in the soup rather than a completely smooth colour, but I do think it improves the flavour. Oh, and I don't have a specific favourite recipe for it but there must be plenty online - a creamy, potato-based chowder, vegetarian or with clams etc, including onions and corn. Serious comfort food for a wet, chilly season.
