{Cooking at Home} ~ Chicken Salad with Grapes & Cran-raisins

I had a newer friend over for tea
and I made a lovely
chicken salad.
Inspiration for this came from three places:
1. My Mother's recipe.
2. This one
3. And this one.


Cooked chicken thighs, about three of them, cut up.
I used about a cup of half mayo / half sour cream,
a cup of grapes sliced, half cup of cran-raisins, salt, pepper,
1 tsp lemon juice, egg shell pasta cooked, mixed in at end.


It was quite delightful!

That sounds very tasty! Love the glass dishes - they make a salad into a display. And I always admire that beautiful tablecloth :)

I also like fruit in chicken salad - it really improves it, to my mind.

Looks interesting. I've never been one to add fruit to chicken salad, but I need to try it. A great addition to chicken salad is curry powder. If you haven't tried, you've got to. I loved it so much, I add to my chicken soup and tuna salad, and at this point, just about everything else. One of my sisters asked me in exasperation one day if I made anything without curry powder. I haven't tried it with dessert yet, but I think curry and dark chocolate could be an interesting combo...

There just might be a chocolate, curry and cardamom cake in the future, gotta check out the Moosewood cookbook for inspiration

Yummy! I have to save the recipe for later. I like that you suggest to use half mayo/ half sour cream.
