Curry Vegetable Dish ~ what we enjoyed for July 4th weekend

Mr. Husband and I stayed in town for the 4th and
just enjoyed being home together.
And I was able to make a new dish,
a curry with various vegetables.

Mushrooms, carrots, green pepper.

I used the above recipe with many changes.

One thing I would do differently next time
is not cook the vegetables as long.

I soaked the cauliflower before using it.

I also added some russet potatoes
as I did not have the waxy potatoes mentioned in
the recipe.

The curry spices were added to oil first,
then the potatoes.
I am going to do less baking time for the potatoes
as they were very soft by the end.

But it was still good!
We enjoyed it with some basmati rice. 

Mr. Husband loves raw veggies so we
had some raw cauliflower too.
 
The recipe did not call for salt or pepper,
which we added at the end.
With it,
it was a great meal!

With the mentioned future DV adjustments,
I think this curry can be a meal Mr. Husband and I
can enjoy in future fasts!

Dinner ~ Lasagna


Tonight I cooked up a
meat sauce and added the
Fia sauce to it.

It was fun to make.
I love being creative in the kitchen!

I had ordered ricotta goat cheese for it
and read the above recipe
(from Mark Bittman's how to cook everything)
wrong and only had 1 cup total of ricotta cheese.
So used tons of mozzarella in the middle with a little
ricotta cheese/layer.
I used sharp cheddar for the top layer.

Then there was that moment
when I saw bit of smoke coming through the stove top.
Oops.
Filled it too full,
forgot to drain the meat
(did so afterwards by spooning it out)
and it spilled over.
Thankfully I have a patient husband.

It turned out well!
 
Yum!
The flavours of the fia sauce and using the
Basic Italiano meat sauce recipe
together
(using the fia sauce in place of the tomato sauce
works wonderfully!).

There was lots of left overs that we froze
and some we put in the fridge for later.

Dinner Table and Left Overs


Simple dinner
of Pasta
and bread and cheese.

Loving the various cheeses we were given
and the dishes I have to
grace my table with!

The baked Ziti.
It was quite good!

Fresh Bread.

My new butter dish!
I am loving it!

Lots of left overs for our freezer!
I am already thinking of who
other than my loving husband
that I can feed them too...

Adjusting to a new city takes a lot of energy.
We live in a smallish mini-city
but are near to a much bigger one...
I will post about that some day...
For now,
I can say that I feel a bit
wilted and tired.
*
But I am happy that the pasta turned out well!
