Too hot to cook? Make a chilled salad.
ReplyDeleteSlice and dice a plum tomatoe or two. Slice and dice a fresh crisp cucumber. Salt, pepper, garlic to taste. Lastly, slice mozzarella cheese over it. Put all in a bowl. Sprinkle liberally with virgin olive oil and a dash of vinegar. Stir well. Enjoy!
For some pizazz, add a slice or two of proscutto ham.
If all else fails, eat one or two ice cream sandwiches and forget healthy!
I've gone an made myself hungry!
Isn't Blessed John awfully encouraging? If you ever get to make a pilgrimage to SF to venerate his relics, it's just a short hop to visit me--remember that!
ReplyDeleteIt rained here in Ohio, too...yes, nice and cooler, but not cool enough for me to cook. I understand. We do not have central air conditioning, so have the windows open, fan in the window, to create a breeze....and eating lots of watermelon, blueberries and cherries...and peanut butter & honey sandwiches!

Marfa - I love pb and honey sandwiches!!! yum... It is hard not to have air conditioning where I live in an apartment; I am really fortunate to have one for my living room; I hope your house is not too bad with the fans...

I know how you feel. When the weather is warm I don't have energy to cook. Salads are the best way to go. Hope you are well.
ReplyDeleteMmm! Still hot here too. I've been eating a lot of pasta salad lately, with raw baby spinach (or other salad greens), red pepper, avocado and flaked cooked fish. Dressing: a little raw garlic finely grated, lots of lemon juice, french/wholegrain mustard, honey, salt & pepper. Add lots of any leafy herb you like (probably just one) - basil, dill, thyme, cilantro...
